Made these two recipes last night. First is an old standby I've made before. Second is a new one that still needs a little work.

Needed items:
Small duck breasts (figure 3-4 per person, teal and ringer breasts work well with this recipe)
Softened Cream Cheese
Fresh Jalapenos
Thick sliced bacon
Toothpicks

Preparation:
Slice jalapenos and butterfly duck breasts. Stuff duck breasts with cream cheese and jalapeno slices. Wrap with bacon. Stick a tooth pick through bacon and breast to hold together.

Cook Time:
Either grill or throw in the oven at 450 for 30 minutes.

Needed Items:
Large duck breasts (figure two per person, mottled and mallard breasts work well with this recipe)
Patty style Italian sausage
Eggs
Flour
Panko bread crumbs
Toothpicks

Preparation:
Butterfly duck breasts. Put flour and Panko in separate breading pans. Put eggs in bowl. Stuff duck breasts with sausage. Stick a tooth pick through breast opening to hold closed. Roll duck breasts in flour pan. Drop breasts in egg wash. Roll breasts in Panko. 

Cook Time:
Throw in the oven at 450 for 35 minutes.
